Early Harvest olive oil from the olive groves of the Monastery of Xenophontos is a genuine natural athonite product. To prepare it, the monks gather with their hands green olives from the orchards of the monastery and process it by using only traditional methods.
The green olive oil is produced from unripe green fruit of the olive tree. It belongs to the category of extra virgin olive oil but differs from the others from the ripe fruit of the olive tree. It has intense green color and more bitter, spicy and fruity flavor. Ancient Greeks were used it as a food and for medicinal purposes, with spectacular results.
It is produced by the method of cold pressing. You can store it in a cool, dry place away from sunlight.

When olive oil comes from green olives, it has a higher polyphenol content. So the green olive oil relative to the mature virgin olive oil is richer in polyphenols, vitamins and minerals.

Scientific studies have shown that green olive oil has a higher content of both substances with large pharmaceutical interest, elaiasini and elaiokanthali. Elaiasini is strongest antioxidant while elaiokanthali has antiinflammatory and neuroprotective properties.
